Yummy Poke Bowl!!

Eating healthy, doesn't have to be hard- check out this incredible recipe when you are feeling like you want something nutritious but GOOD!
 
Poke Bowl
1 serving. 1 leanest, 3 green, 3 condiments, 2 healthy fats.
Ingredients:
7oz crab/salad shrimp cooked (1 leanest)
1/4  cup (.88 oz) scallions chopped (reserve 1 T) (1/2 green)
1/4 cup (.53 oz) cucumber chopped and seeded (1/4 green)
1 cup cauliflower rice cooked and cooled (2 green)
1/8 cup (.40 oz) jalapeño minced (1/4 green)
1 Tbsp white onion thinly sliced (1 condiment)
1 tsp sesame oil (1 healthy fat)
1/2 Tbsp sesame seeds toasted (1/2 healthy fat)
3/4 oz sliced avocado (1/2 healthy fat)
1 Tbsp dried seaweed flakes (1 condiment)
2 Tbsp rice vinegar (no sugar added) (1 condiment)
 
Directions:
For the rice- mix vinegar and cauliflower rice and chill for 1 hour. For the poke- mix crab, scallions, cucumber, pepper, onion, sesame oil and sesame seeds and chill for 1 hour. Assemble- top your rice with your poke, garnish with avocado, reserved scallions, seaweed and serve.
