Incredible Summer Caprese Salad!

I’m making this as a healthy appetizer for our Labor Day Weekend pool party! It's a light summer recipe that can be enjoyed as an appetizer or a meal.  Let me know what you think!

Caprese Salad

Yield:1 Serving

Per serving:

1 Lean

3 Green

2 Condiments

Ingredients:

4 oz mozzarella between 3 to 6 g fat per oz, cubed

1 cup baby spinach

1 cup or 180g Roma or heirloom tomatoes, sliced

1/4 cup chopped fresh basil

1/8 tsp salt

1/8 tsp pepper

2 tbsp Walden Farms Balsamic Vinaigrette Dressing

Directions:

Place a bed of greens on the plate.

Season tomatoes with pepper and salt and then layer then over spinach. Add mozzarella on top of tomatoes. Drizzle dressing over tomatoes and cheese. Top with fresh chopped basil.
